Chester's newest independent restaurant promises "hearty comfort food"

Rufus Court will soon welcome its newest independent restaurant, led by Greenhouse's former head-chef, April Kirk.

Bread and Butter is set to open on May 1 in the building formerly home to European tapas restaurant, Greenhouse - which recently vacated the premises as part of a refurbishment.

With work well underway, Nub News spoke to owner April Kirk about what we can expect from her newest venture.

The project initially began with what April identified as a gap in the market for "locally-sourced and hearty comfort food".

She told Chester Nub News: "I wanted to do something really simple that everyone knows, but with really nice, high-quality produce.

"It will be the kind of food that your family makes for you.

"It will be your basic, hearty comfort food. Your pies, stews and soups - stuff like that.

"I was going to go with the idea of traditional British food, but I didn't want to put myself in that box.

"I wanted to give myself that space."

The former head chef explained that sourcing locally would also be an important factor for the restaurant - prioritising local produce and Chester-based trade.

On the theme of family and home-based cooking, she cited Chester's "vibrant" community as a major influence when deciding to launch the business in the city she grew up in.

April added: "Chester is my home; I've lived here my whole life and my family lives here.

"I just can't imagine anywhere better to live, which sounds a bit silly, but I do just love it."

The name, Bread and Butter, is emblematic of the chef-turned restaurant owner's desire to create a go-to spot to eat in the city.

She explained: "The name is a combination of two things, really.

"Do you know that phrase, when it's your bread and butter, it's your go-to.

"I would love for my place to be someone's go-to place; It's also the idea that simple food is always the best food.

"What I hope to offer is standard, good food. Good food done well.

"I feel like it's the best of both worlds. It will be affordable, good quality, hearty food."
