New Bridge Street restaurant to open next month

A restaurant with a focus on 'neighbourhood dining' is set to open on Bridge Street early next month.

'Noted' is headed by chef and restaurateur Andrew Sheridan, who announced the latest opening date over social media.

The new eatery will open its doors on Wednesday 1 October, with bookings now available.

Featuring a menu designed for "sharing or equally solo diners", guests at Noted can enjoy dishes made with "international inspiration and creative techniques". 

It will use seasonal produce and celebrate the best of British farming, "with an international twist". 

Having received fine-dining training early in his career at ABode Hotel in Chester, Sheridan spent much of his early career in the city.

National attention soon followed, with appearances on BBC Two's Great British Menu in 2018 and 2019.

The restaurateur initially announced the news with a September opening date, revealing guests could expect "seasonal menus" in a space made for "good food and great company".

'Noted' will follow a "shared tasting format", with dishes put in the middle of the table for guests to share each course.

Citing the format as "more relaxed" and "conversational", the chef believes the restaurant will reflect the up-to date ways people "actually want to eat".

Behind the new venture is the fast-growing Open Restaurant Group (ORG), which is led by Sheridan, alongside directors Sam and Emma Morgan. It now operates eight sites across the country, including its newest Chester eatery.

Da Noi, a Michelin-star restaurant, previously occupied the unit.

Its co-owners Fabrizio Gobbato and Valentina Aviotti announced the imminent closure in October last year, after six years of business, revealing they were stepping back to focus on their other local businesses, Augusto Pizzeria and Krum Gelato.
